Wait, I didn't know this was a food blog!

With all of the health challenges Danny and I are in, it is hard to find a good, creative recipe that isn't a salad!  I found this 


CAULIFLOWER PIZZA CRUST RECIPE

and had to share it.  It is so good!!!

I found the recipe here and changed a few things so here is my recipe.

DOUGH
Heads of cauliflower (1 head per person is about the right amount)
Eggs (1-2 eggs per head of cauliflower)
rosemary
Garlic
Oregano
Cilantro

SAUCE
3 tomatoes
1/2 cup of Greek Yogurt
seasonings/cilantro (optional)
 
Other ingredients to top your pizza.



Chop up the cauliflower and run through a food processor so that it looks like rice.


  Put it all in a microwave-safe bowl and put it in the microwave for about 4 seconds.  I never use the microwave because there is nothing natural about it and that scares me.. Therefore, I put the cauliflower on the stove and warmed it up there. 
Next, put the cauliflower in a clean dish towel and twist all of the water out over the sink.  The more water you get out, the better.

 
When it is done, you should be able to pick up the water-less cauliflower and smash it into a ball, much like dough.




Mix that with 1-2 eggs per head of cauliflower, rosemary, garlic, oregano, and cilantro.  If it is a larger head or for some reason you weren't able to get a lot of water out and it seems crumbly, mix it with 2 eggs.  The eggs help the dough to hold together well. Mix with hands for a better dough.












Spread that in a circle just like a pizza!


Cook just the dough at 500 F for about 15 min or until the edges are golden brown.

While that is cooking, make the sauce by putting about 3 tomatoes in the food processor and mixing that with 1/2 cup of Greek yogurt to get the paste texture. Adding other seasonings and/or cilantro is optional.
Cut up anything else that you want on the pizza.. you might as well.




When the dough comes out, you can immediately put on the sauce and your ingredients!
Bake again for about 5-8 min.

What are you hiding behind?

I get so inspired by my good friend, Kristin and her consistency on her blog. 

 I love writing on my blog!  I just have so many things going on that it is hard for me to sit in front of the computer and not  be editing photos from our last shoot, using social media to help build our doTERRA business, on Insagram with my next yoga series or on Facebook planning our next party of some sort.
Life is just busy and I don't think that will ever change.  
So you get to hear from me on nights like this where all of my photos are edited, doTERRA is not thought much about on Sundays, already posted my newest yoga pic and Facebook is just a tab away.


A little bit ago, Danny and I went to dinner for his brother's birthday.  Everything was normal until all of the lights in the whole restaurant suddenly went out completely.
  
The coolest things happened the second those lights unexpectedly turned off.

The server (who previously was very quiet and reserved) came completely out of her shell.  She started talking loudly, laughing with us and accepted a plate of cake we brought.
The other customers at surrounding tables began to do the same and eventually all of us were sharing this same cake, laughing together and coming up with creative ways to make lights with our phones.

Everyone there immediately came out of their shell as if all social norms turned off when the lights did.  That got me thinking.
We all act a certain way in front of others but when are we completely ourselves?  In other words, why aren't we completely ourselves in front of everyone else?  What are we all hiding behind?
In this case, it seemed that the lights themselves were that very thing everyone was hiding behind.  But why?
Why can't we share cake, laugh and discover our creativity with strangers in the light?  What is it that keeps us from being our true selves ALL the time?  What is "Social Norm" anyway?  Why do we feel like we have to act a certain way in certain situations?

In the mall, at the grocery store, at work, at school, with friends, everywhere.. we all act a certain way; usually the same "socially acceptable" way.  What would life be like if we all acted exactly the same way we act when we are completely and absolutely ourselves.  What if we all acted the same way we act when we are by ourselves or with our family?
I know for me, when I am with my family (especially my siblings), with my husband or by myself, I act completely different than when I am around anyone I don't know as well as my family.  I am even very different than when I am with friends.
I guess it is our comfort zone.. when we feel comfortable in it vs. when we don't.

Imagine for  a minute what life and the world would be like if we all acted original everywhere we went.  What if nobody cared what other people thought of them and we were all confident in who we are? I, personally, think it would so much more fun!!

A huge goal of mine, since that night when the lights went out, is to act completely myself in all situations, even in front of strangers.  It has been difficult because we have been trained, if you will, to act reserved.  

I want to shine through my shell. I want to show others who I really am and I want to be confident in that.  I want to make more friends because I step out of my comfort zone enough to actually get to know the person behind the counter.  I want to be the light in other's lives because I'm not afraid of being my complete self.

That's my goal, what is yours?  How can you be the change you wish to see in this world?

New Summer Love!

Every summer I have a new love for life.  I think it is the sun, the fact that no one is in school, and the feeling of starting something new that inspires me!
Last summer my love was California.
The summer before that it was... that was too long ago.. I can't remember.
But THIS SUMMER it is my new GARDEN!!

Here's the story.


One fine day, Danny and I were walking through Target looking for rank gifts for our doTERRA team training.  We couldn't find exactly what we were looking for until we got to my favorite part of the store where they have a maze of aisles that hold everything magical.  Everything is one to three dollars and they are such fun/random things!

So while smiling through this maze, we found the perfect gift.  A kit to grow your own plant as a metaphor for growing their team!  They came with the cutest pots and you could choose strawberries, sunflowers, or basil.  I was ecstatic!! I bought two sunflowers and a basil for me (the strawberries were gone after we took the last of them for our team).

About two days later I planted them in their adorable pots, tucked them in all nice, and talked to my flowers every day while watering them.  YUP I am one of "those"!  I love talking to my plants and firmly believe that they can feel and grow off of the energy you give them.  Look it up, it's real!

My plants grew!! 
It made me so happy to see them grow because I did that! I helped them become something beautiful!  

I then started reading up about outside gardens and vegetables because that would be amazing to see more plants grow and even produce food!  A couple weeks later we found ourselves at Home Depot buying my garden.

I got some starts from my mother and made my first garden!

I do want to make a shout out to my wonderful Husby!  Without him, I could not have done all of this! His expertise made it so beautiful! It definitely pays to marry a man who can do EVERYTHING!

Live Heathly And Happy

It's been forever!
My blog and I are reunited... at least for now...
I love keeping up with my blog!  It adds reasons to take more pictures than I normally would!  
Ok so maybe I wouldn't say I love KEEPING up with my blog.. because it does need some work.
But every once in a while I don't have anything better to do so you get a little treat!




doTERRA has been lifting off and flying! We love what we do and know that we are exactly where we are supposed to be in our lives!  Because of the blessings doTERRA brings to us, we get to help uplift and serve others!




We also got to go on a CRUISE with our doTERRA leaders!
16 people, 8 couples, and waaaay too much fun.

I feel so incredibly blessed to be a part of an amazing team and company like doTERRA.  If someone had told me that my life will be filled with nothing but service, holistic health and best friends I would have imagined something like an hourly job and coworkers.  I would have never imagined that the unspeakable network marketing biz would get me there!  
doTERRA is so different from any other company and I love that it doesn't even feel like any type of network marketing.  
It is however, the most difficult, most fulfilling, most adventurous, most successful, most achieving, most hard work, most dedicating thing I have ever accomplished.
But so SO worth every bit of work, time, personal development, leadership, and determination!

Beauty

There is something about the beauty of a silent mountain.
When you are at the top, looking down at the world.
Now add some snow.
Lots of snow.
Cold and silent.
Now add a pair of skis.
The silence gets interrupted as you start sliding down.
The air rushing past your face gets a lot colder.
The snow, smooth and flattened behind you.
As you face the mountain, skating down it's surface, picking up speed as you go.
The feeling of flying and freedom is overwhelmingly wonderful.
Now add the one thing in this world that makes life worth it... people.
Add the one person that supports your every decision.
Add the two people that bring a smile to your face no matter what.
Add the people in your life that are just happy to be there.
Add the strangers that love what you love.
Add the new people you meet and the memories of the old.
Add laughter, yells, and howls that are disrupting the silence.
Add adventure, accomplishment, aspiration and inspiration.

That is the beauty of skiing.

Yeah, Two years! I know, It is so crazy!

As long as an Elder missionary is out in the field,
As long as as Associates Degree takes,
As long as it takes for a baby to start getting their molars/teething,
As long as it takes to be able to upgrade to a new phone,
As long as it takes for a green card to expire,
As long as it takes for the Olympics to show it's face again,
As long as it takes to get another Mammogram appointment,
Approx. 7,998,772 births in the U.S.
Approx. 4,936,870 deaths in the U.S.
A child laughs approx. 219,000 times,
An adult laughs approx. 10,950 times,
Approx. 4,192,000 marriages in the U.S.
33-34 Senators are elected,
A child can say approx. 5 words,
730 days,
Approx. 56 first kisses,
Approx. 300,000 kisses given
... IN...

Things I have learned in these two WONDERFUL years of being married:

- Instead of dating other people, you "date" other couples, together!
- You always have a support system with everything you do.
- You always have a jar opener! ( In my case I have 5 because I swear he can open every jar with two fingers!).
- When they say, your other half, they aren't kidding because you can be totally, 100% yourself and weird and that other half of yours completely understands it all.
- Life is so much greater.
- You get more benefits from FAFSA.
- I always feel so incredibly safe.
- I now have someone to dance with me in the kitchen!
- Responsibility and cooking is hard sometimes.
- Best workout buddy/personal trainer EVER.
- My relationship with my husband is the most important.
- I don't think I have ever laughed so hard with anyone else ( my sisters are an exception).
- I have learned a TON about myself!
- It is probably my favorite thing when Danny gets excited about something and draws back some of those 'little boy' mannerisms in him.
- Time goes by way too fast when you are having fun.
- Friends come and go but the true ones never leave in the first place.
- Molding two very different lives together is a lot of fun.
- Danny is the only person who knows exactly when I am upset, tired, hungry, or just emotional and knows exactly how to help the situation.
- I never thought I would be able to spend literally 24/7 for over 2 months with anyone..Looks like I was wrong and loved every second of it!
- Danny always loves a little head scratch.

Things I learned in the last 5 minutes:

- That is a long list.. And it is definitely not over..
- I learned a lot in two years of being married!  Now imagine year Three, year FOur, year FIVe!  ETERNITY!
